Pandan milk (sâm dứa sữa) is a cool, non-alcoholic green drink made from fresh pandan leaves or pandan syrup with condensed and fresh milk. Easy to make at home, just as good as a cafe.
Pandan milk, known in Vietnamese as sâm dứa sữa, is a NON-ALCOHOLIC drink with a soft green color, made by combining the aroma of pandan leaves with condensed milk and fresh milk. There are two popular ways to prepare it. One uses fresh pandan leaves: blend, strain, then gently cook to extract a naturally fragrant essence. Choose deep green, unwilted leaves for a clear aroma and a naturally pretty color.
Using the quick method with syrup or pandan tea: prepare 25ml of pandan syrup (or one strongly brewed pandan tea bag), 30ml of condensed milk, 120ml of unsweetened fresh milk, water and ice cubes. This method is fast and well suited when you need to serve many glasses or run a business.
For equipment you will need a blender (for the fresh-leaf method), a fine strainer or filter bag, a small pot, a glass, and ideally a shaker or a lidded glass to shake the mixture evenly. You can also add crunchy aloe vera to turn it into pandan aloe milk.

Step 1 - Extract pandan essence (fresh-leaf method): Cut 100g of pandan leaves into small pieces, blend with 400ml of water, then strain through a sieve or filter bag to collect the green liquid and discard the pulp. Simmer this liquid over low heat for a few minutes to release the aroma. Do not boil it hard or long, to avoid discoloration and bitterness.
Step 1 alternative (quick syrup method): Mix 25ml of pandan syrup with about 80ml of water and stir well. If using pandan tea, brew it very strong then let it cool a little. This part provides the aroma base and the green color for the drink.
Step 2 - Prepare the milk: Add 40ml of condensed milk and 120ml of unsweetened fresh milk to a glass and stir until the condensed milk fully dissolves. Dissolving the condensed milk first keeps the drink smooth and helps prevent the layers from separating once ice is added.
Step 3 - Finish: Add ice to the glass, pour in the pandan base, then slowly pour the milk over it to create a pretty layered swirl, or put everything into a shaker with ice and shake firmly for about 15 seconds before pouring out. Taste and adjust sweetness with a little sugar if needed. Enjoy while cold to fully appreciate the refreshing flavor.

To avoid bitterness when using fresh pandan leaves, do not simmer the pandan water for too long or over high heat. Just simmer gently until the aroma comes through, then turn off the heat. Cooking too long both fades the fresh green color and leaves a slightly bitter aftertaste. If you add aloe vera, soak and rinse it thoroughly with diluted salt water to remove sliminess and bitterness.
To prevent separation, stir until the condensed milk is fully dissolved before adding ice, and use a shaker to blend the mixture well. If you want to keep the pretty swirl like at a cafe, pour the milk slowly down the side of the glass over the base and serve immediately, because the layers will naturally blend together if left to sit.
For sweetness and creaminess, adjust the condensed milk to taste; for a lighter sweetness, reduce the condensed milk and add more unsweetened fresh milk. Using unsweetened fresh milk keeps the balance, avoids cloying sweetness and brings out the pandan aroma. Use plenty of cold ice and pour quickly so the drink stays cool and the green color stays fresh.
From the base recipe you can create many versions. Pandan aloe milk adds crunchy aloe vera for a fun bite. Pandan coconut milk replaces part of the fresh milk with coconut milk for a rich, tropical creaminess. You can also add tapioca pearls or jelly to make an eye-catching topping drink for younger guests.
