Pineapple sugarcane juice blends fresh sugarcane juice with ripe pineapple for a sweet, lightly tangy and very refreshing drink. Get the step-by-step alcohol-free recipe here.
Pineapple sugarcane juice is a drink made by pressing sugarcane stalks and then mixing in the juice or pulp of fresh pineapple. The sugarcane brings a gentle, clean sweetness while the pineapple adds a fragrant aroma and a light tang, giving the glass a balanced taste that is less cloying than plain sugarcane juice.
One point that confuses many people is the regional name for pineapple in Vietnamese. In the south the fruit is usually called thom or khom, while in the north it is called dua. So nuoc mia thom, nuoc mia khom and nuoc mia dua are in fact the same drink, differing only in the local name.
This is a completely alcohol-free drink suitable for all ages. The natural sweet, cool taste together with the pineapple aroma makes it a familiar thirst quencher on hot days, and lately many shops have added it to the popular family of mixed-fruit sugarcane drinks.
For about two glasses of pineapple sugarcane juice you need the following basic and easy-to-find ingredients.
Fresh sugarcane: around four to five segments, roughly 300 to 400 ml of juice after pressing. If you do not have a press, you can buy pure unsweetened sugarcane juice from a trusted stall.
Ripe pineapple: half to one small fruit, peeled, with the eyes and core removed. Choose an evenly golden fruit that smells naturally fragrant near the stem for the best sweetness and aroma.
Optional extras: a little calamansi or lime juice to lift the tang, a few ice cubes, and mint leaves for garnish. There is no need to add sugar since the cane is already sweet enough.

Step 1 — Prepare the cane and pineapple: wash the cane, peel it and cut it into segments that fit your press. Peel the pineapple, remove all the eyes, cut out the hard core, then chop it into small pieces for easy pressing or blending.
Step 2 — Press the sugarcane: run the cane through a sugarcane press to extract the juice. If you use a home slow juicer, press gradually and strain through a sieve to remove fibers. Keep the juice in a chilled bowl to slow color change and fermentation.
Step 3 — Process the pineapple: press the pineapple for its juice, or blend it and then strain through a sieve to remove the pulp. If you like some pineapple flesh in the glass, keep a little to add body and aroma.
Step 4 — Mix and season: combine the sugarcane juice with the pineapple juice at roughly three parts cane to one part pineapple, then taste and adjust. For a brighter tang add a little calamansi juice. Pour over plenty of ice, garnish with a pineapple slice or mint, and serve right away while cold.

Balancing sweet and sour is the deciding factor. Sugarcane juice is naturally very sweet, so pineapple and a touch of calamansi act as softeners that keep the finish clean and stop the drink from feeling heavy. Taste and adjust gradually rather than adding all the pineapple at once.
Use very cold ingredients and drink immediately. Sugarcane juice left out in the air darkens and loses flavor quickly, so press only as much as you will use. Chilling the glass and ice in advance keeps the drink crisp and cool.
Choose pineapple that is fully ripe and fragrant. Ripe pineapple gives a clear aroma and natural sweetness, so no added sugar is needed. If the pineapple is too sharp, reduce its amount or raise the share of sugarcane juice to rebalance.
Strain the pulp well. An appealing glass of pineapple sugarcane juice should be clear and smooth with little sediment. Straining twice through a fine sieve makes the drink silkier and more attractive when served.
Pineapple sugarcane juice is easy to vary within the mixed-fruit sugarcane family. You can add orange, calamansi, mint, strawberry or watermelon to create many versions with different colors and flavors, perfect as a cool menu for outdoor or summer parties.
When serving large numbers, prepare the sugarcane juice and pineapple juice separately, keep them chilled, and mix only right before pouring to keep the flavor fresh. Garnish with pineapple slices, mint leaves or a handled glass to make it more eye-catching.

They are not different. Thom, khom and dua are the same fruit with different regional names, so nuoc mia thom is the same as pineapple sugarcane juice.
You can buy pure unsweetened sugarcane juice from a trusted stall, then press or blend the pineapple at home and mix the two at whatever ratio you like.
A good starting point is about three parts sugarcane juice to one part pineapple juice, then taste and adjust based on how sweet the cane is and how tangy the pineapple is.
It is best enjoyed right after pressing. If you must store it, keep it chilled and use it within the day, since it darkens and loses flavor when left too long.
