A matcha latte is a drink that combines whisked matcha green tea powder with milk. It is inspired by the coffee latte but swaps the espresso for green tea, resulting in a beautiful jade-green cup with a gentle tea flavor balanced by creamy milk.

For one cup of about 300ml you need: 2 grams of pure matcha powder (roughly one heaping teaspoon), 30ml of hot water at around 75-80C to dissolve the powder, and 180-200ml of fresh milk. Unsweetened fresh milk and plant milks such as oat or almond all work well.
Sweetening is flexible to taste: 10-15ml of sugar syrup, honey or brown sugar. If you are making the iced version, also prepare a glass full of ice cubes.
Recommended tools: a small sieve to sift the powder and avoid clumps, plus a chasen (bamboo matcha whisk) or a handheld milk frother to create a smooth foam. If you do not have a chasen, a small whisk or a shaker bottle can work in a pinch.

Step 1 - Sift: pass 2 grams of matcha through a sieve into a cup or wide bowl. This is the single most important tip to keep the powder loose, evenly dissolved and free of clumps.
Step 2 - Whisk to dissolve: pour 30ml of hot water at 75-80C onto the powder. Avoid boiling water at 100C because excessive heat strips the green color and turns matcha bitter. Whisk with a chasen in an M or W motion for about 15-20 seconds until the mixture is smooth and a fine foam appears.
Step 3 - Add the milk: for the hot version, warm the milk and froth it, then slowly pour the matcha on top. For the iced version, add ice to the glass, pour in cold milk, then gently pour the matcha over it to create the lovely layered color effect.
Step 4 - Finish: add syrup or honey to taste and stir well before drinking. Dust a little matcha powder on top as a garnish if you like.

Choose good matcha: drinking-grade matcha (ceremonial or premium) gives a fresh green color and a sweet finish with less bitterness than baking grade. This is the factor that decides whether a latte tastes great or flat.
Control the water temperature: always let the water cool to 75-80C before whisking. Water that is too hot is the number one reason matcha turns bitter and yellow.
Whisk well and sift: these two steps decide the smoothness. Sifted powder plus a quick whisking motion produces silky foam just like a cafe, with no grittiness.
Balance the ratio: if it tastes weak, raise the matcha to 3 grams; if it tastes harsh, add more milk. Store matcha in an airtight container away from light and moisture to preserve color and aroma.
