Peach orange lemongrass tea is a refreshing alcohol-free drink that combines steeped tea with preserved peaches, fresh sweet orange and bruised lemongrass. It tastes lightly sweet from the peach, gently tart from the orange and fragrant from the lemongrass.
It is an upgraded version of the familiar peach tea: adding orange and lemongrass makes the drink brighter, more aromatic and less cloying. Many beverage shops put it on their summer menu because it is easy to drink, suits most palates and works for all ages.

Black tea or red tea: 2 tea bags, or 6g of loose tea.
Hot water at 80-90°C: 300ml for steeping the tea.
Preserved peaches: 2-3 pieces, sliced, plus 30-40ml of the peach syrup for a sweet base.
Sweet orange (such as navel orange): 1 fruit — squeeze for juice and keep a few thin slices to garnish. Avoid bitter orange varieties.
Fresh lemongrass: 2 stalks, bruised and cut into segments to release the aroma.
Sugar or sugar syrup: 20-30ml, adjust to taste.
A few drops of lime juice to balance the flavor (optional).
Ice cubes: fill the glass when pouring. Tools: a steeping pot, a strainer, a shaker if available, and a glass of about 500ml.

Step 1 — Steep the tea: put the tea into a pot, pour in 300ml of water at 80-90°C, steep for 4-5 minutes, then remove the bags or strain out the leaves. Steeping at this temperature keeps the tea from turning bitter.
Step 2 — Infuse the lemongrass: bruise 2 lemongrass stalks, drop them into the still-hot tea for 3-5 minutes to release the aroma, then remove the large pieces.
Step 3 — Mix the flavors: add 30-40ml of peach syrup, the juice of 1 sweet orange, 20-30ml of sugar and a few drops of lime juice to the warm tea, stir to dissolve and adjust the sweetness and tartness.
Step 4 — Shake: pour the mixture with some ice into a shaker and shake hard for 10-15 seconds to blend everything and create a fine foam. If you have no shaker, stir very thoroughly with ice.
Step 5 — Finish: arrange peach slices, orange slices and a lemongrass segment in a glass full of ice, then pour the tea over. Stir gently and enjoy while cold.

Steeping temperature: keep it at 80-90°C; do not use water at a full boil of 100°C, as it makes the tea bitter and overpowers the peach, orange and lemongrass.
Choose sweet oranges: prefer juicy sweet oranges such as navel oranges; avoid bitter orange varieties whose pith and seeds can make the drink bitter.
Bruise the lemongrass: crack the stalks so the essential oils escape, then infuse in the hot tea for a few minutes; infusing too long turns it harsh.
Shake for 10-15 seconds: this blends the peach, orange, tea and sugar evenly and creates a fine foam that looks as good as a shop drink.
Balance the flavor: add sugar gradually and a few drops of lime juice so the sweet-tart balance is harmonious and keeps the tea aftertaste without being sharp.
Easy variations: add a few mint leaves for extra freshness, swap preserved peaches for fresh peaches in season, or add chia seeds and fruit jelly as toppings to make the drink livelier.
